In 1997, Michel Chapoutier set off to explore the terroirs of Australia and settled in the state of Victoria. Renowned for its distinct soils and astonishing diversity of microclimates. With vineyards in the Pyrenees and Heathcote, our goal is to create world class wines that speak of the individual terroirs in which they are grown.

The Tournon Shay's Flat Vineyard Shiraz takes its name from a locale in the Australian Pyrenees (Shay's Flat), an east facing ridge in the southern foothills. It appears as a natural amphitheater with red soils of schist, quartz and rich clay. The organically farmed vineyard features ten hectares of shiraz in two parcels. Harvested at night the grapes are de-stemmed and fermented in vat with a long maceration. Aged in French oak for 12 months, the resulting wine has a dark red colour with a complex nose of black fruits and tobacco leaf.
