Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy. The winery was built in 1964, and today It unites 11 separate cellars and their combined 4,500 grape growers across 7,000 hectares of vineyard, to produce an impressively broad portfolio from an intriguing palette of indigenous and international grape varieties. The Bottega Vinai range uses only grapes specially selected from the most suitable vineyard plots. This means that just the top 3% of vineyard area available to them is used to source grapes for the Bottega Vinai wines.... and these are labour-intensive wines!

Vines are planted in the limestone soils of Roverè della Luna, north of the city of Trento. Here yields are relatively low and it is an area recognised for the quality of its Pinot Nero. After maceration on skins and fermentation in stainless steel, the wine spends a short time in oak before bottling. The result is this bright young red with layers of crunchy fruit and juicy acidity. Bright, fresh, youthful style of Pinot Noir with red berry and cherry fruit. Crunchy red fruits on the palate with notes of bilberry and wild cherry balanced by supple tannins and juicy acidity. A savoury spicy finish showing delicate, subtle varietal characters. Pair with light dishes such as charcuterie and paté, or steak frites and rare lamb.
