Established in 1820, the House of Ayala has an incredible history, with a pioneering and visionary personality at its helm, Edmond de AYALA always sought to go the extra mile. The name AYALA comes from the champenois village of Aÿ, where the House has been located since its creation. A pioneer in introducing a drier style, Edmond had the flair to launch “dry champagne” in 1865, with only 21 g/L. A bold statement in favour of purity, contrasting with the traditional French dosage of more than 150 g/L at that time, but it laid the foundations of the Champagne style we know today. Bollinger acquired AYALA in 2005, reaffirming its place in the Champagne Rolodex of stars.

Elaborated in limited quantities, exceptionally during the most expressive years, Le Blanc de Blancs brings to the light all of the elegance and the purity from the Chardonnay of the Côte des Blancs. This terroir is home to the most beautiful Chardonnays with a great ageing potential, including three Grands Crus which form the fundamentals of the blend.

Tasting Note:
Fresh and lively from the get-go, with a broad and appetising palate of white fruit and acacia honey, subtle pastry overtones. The finish is long and persistent, revealing a delicate salinity, along with hints of grapefruit and blood orange.
