Zensa, pronounced ‘Sensa’, by Italian definition means ‘without.’ They focus on using organic grapes from Trapani (Sicily) and Puglia, producing wines from Primitivo (Zinfandel to some), Nero d’Avola, and Fiano.
Selecting grapes from low-yielding, fully organic vineyards in Salento (Southern Puglia), their Fiano white is exceptionally fresh. The grapes are hand-harvested early in the morning to retain maximum acidity, while a gentle pressing followed by a short chilling period retains the bright fruit flavours. The week spent on its lees post fermentation allows for a well-balanced finished wine, with tropical notes and a refreshing palate.
